  • 1 tbs Olive Oil
  • 1 lb Beef Stew Meat
  • Salt and Pepper, to taste
  • 2 Garlic Cloves, minced
  • 1 tsp fresh Ginger, chopped
  • 1 Jalapeno, diced
  • 1 tbs Curry Powder
  • 1 14.5-oz can Diced Tomatoes, undrained
  • 1 Onion, diced
  • 1 C Beef Broth
  • Cooked White Rice for Serving
  • Fresh chopped Cilantro for Serving

Begin this recipe by heating the olive oil in a skillet over medium heat. Once hot, add the beef and brown on all sides. Once browned, remove from the skillet and reserve the juices. Season the beef with salt and pepper; set aside.

Add the garlic, ginger, and jalapeno to the same skillet that the beef was cooked in. Let cook for two minutes until tender. Season with the curry powder and pour in the diced tomatoes with their juices.

Set the onion and beef into the crockpot. Pour the garlic and tomato sauce on top along with the beef broth. Stir to combine. Cover and cook on low for six to eight hours.
