Curried anything always sounds like a difficult thing to make, but it’s really not, especially with the use of a crockpot! This crockpot recipe allows the chicken to absorb all those delicious spices that deliver a dish that will always be a hit! 6 chicken filets, chopped, boneless and skinless

  • 1 ½ cup coconut milk
  • 1 tsp. curry powder
  • 1 tsp. chili powder
  • 2 tbsp. cornstarch
  • 1 tbsp. lemon juice
  • Salt, to taste
  • Pepper, to taste
  • ¼ cup Water

Place pan over medium-high heat
Season chicken with salt and pepper and lightly cook in pan for about 3 minutes
In a bowl, combine coconut milk, curry powder, and chili powder. Mix well and pour over chicken
Place chicken in crockpot and cover and cook on low for about 4 hours (or on high for 2 hours)
Combine cornstarch, lemon juice, and water in a bowl. Mix well
Stir cornstarch combination into crockpot
Cover and cook on high for 40 minutes (or until chicken is tender and sauce is thick)
