  • 6 eggs
  • ¼ C. Mayonnaise
  • 2 tsp. spicy brown mustard
  • ½ tsp. salt
  • ½ tsp. pepper
  • 2 green onions, chopped finely

Place eggs in a large saucepan in a single layer. Add water to pan until the eggs are immersed in 3-4 inches of water. Heat on high and wait until water boils. Once boiling, reduce heat to low and cover for 1-2 minutes. Remove from heat and allow to cook still covered for 12-15 minutes. Once cooked, rinse under cold water for one minute.

Lightly crack the egg on a hard surface and carefully remove shells. Slice eggs in half long ways and remove yolk. In a small mixing bowl, mash yolks with mayonnaise. Add salt, pepper and spicy brown mustard. Using a spoon, fill the empty space where the yolks once were. Garnish with green onions.
