If you're in the mood for something hearty and spicy during these cold winter months, try this Spicy Fiesta Chicken Casserole. It's chock full of chicken, black beans and bold tomatoes--with some jalapenos and chilies for an extra kick.

  • 2 boxes of Spanish Rice
  • 1 can Diced Tomatoes & Jalapenos
  • 1 can Diced Green Chilies* (optional)
  • ½ cup Sour Cream
  • 1 can Corn
  • 1 can Black Beans
  • 1.5 lbs Cooked Chicken cut into strips
  • 2 cups of Mexican or Cheddar Cheese

Cook rice as directed on box. In a separate bowl, combine diced tomatoes and japalenos, corn, black beans, sour cream and 1 cup cheese. (Add chilies for extra spice.) Slowly add chicken to mixture. Layer rice, mixture and rest of cheese in 3 qt casserole dish until full. Bake for 25 min.
