  • 4 boneless pork chops
  • Salt and pepper to taste
  • 2 T. vegetable oil
  • 1 onion, diced
  • ¼ C. water
  • 2 T. brown sugar
  • 2 cloves garlic, minced
  • 3 C. chicken broth
  • 1 T. Worcestershire sauce
  • 1 T. cornstarch
  • 1 T. apple cider vinegar
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. dried parsley

Season pork chops generously with salt and pepper. In a skillet, heat 1 tablespoon of oil and brown both sides of pork chops briefly; transfer to your crockpot. Heat remaining oil in the same skillet and sauté onion and garlic with water until softened. Pour this mixture over pork chops. Return to the skillet and bring chicken broth, brown sugar, and Worcestershire to a boil; remove from heat and add to crockpot. Cook on low for 6-8 hours until tender. Spoon 1 to 2 cups of juices from the crockpot into a saucepan. Whisk together cornstarch and 2 tablespoons of water, pour into saucepan, simmer for 5 minutes as mixture thickens, and add vinegar, salt, pepper, parsley, cumin, and chili powder. Serve pork chops with gravy.
