Elotes are so delicious! They’re a really common street food in Mexico, which means they’re the perfect little dish to make on the fly! This recipe, however, has a slight twist. These elotes have a slight kick to them! They’re spicy, but just enough to add a boost of flavor!

  • 6 ears of corn
  • 3 chili peppers, chopped
  • 3 scallions chopped
  • 3 tbsp. cilantro, minced
  • 2 tbsp. butter, softened
  • 4 tsp. olive oil

Set grill to medium heat. Combine chili pepper, scallions, cilantro, and olive oil in a bowl. Mix well. Brush chili mixture over corn. Place corn on grill. Allow corn to cook on all sides for about 4 minutes. Spread butter on grilled corn when done.
