Spicy Grilled Italian Sausage With Potatoes

- For Spicy Italian Sausage:
- 4 Spicy Italian Sausage (Found in most grocery stores or butchers)
- ¼ tsp. salt
- ¼ tsp. black pepper
- ¼ tsp. Cajun seasoning
- For Potatoes
- 1/2 lb. potatoes
- 1 red pepper sliced
- olive oil
- salt and pepper to taste
For potatoes and peppers, preheat oven to 450 degrees. Wash, peel and cut into wedge shape. To cut potatoes into wedge shape, cut potato in half long ways and slice each half 3 or 4 times depending on desired thickness. Toss in olive oil and salt.
Lay a piece of parchment paper on a baking sheet. Line the wedges so there is no overlap. Bake for 30-35 minutes or until golden brown. If you like them crispier, leave in for additional time. Garnish with green onion.
Heat grill to medium heat. Place sausages in indirect heat of the grill. This can either be in a pan or on an upper rack. Cook covered for 15-20 minutes turning once or until it reaches 150 degrees.
