  • 2 lbs. chicken breasts
  • 4 tablespoons oil
  • 3 tsp. ground cinnamon
  • 3 star anise pods
  • 3 large onions, diced
  • 4 cloves garlic, grated
  • 2 tsp. ground ginger
  • 8 oz. chopped tomatoes
  • 1 tablespoon turmeric
  • 5 cardamom pods
  • 2 tablespoon Indian curry paste
  • 12. Salt to taste
  • 13. Fresh coriander, thinly chopped

In a large pan, heat oil and fry the cinnamon sticks and cloves. Add the onions with ginger and garlic until the onions are golden brown. Now add the curry paste and fry until the oil separates. Next, add the turmeric, cardamom and chicken, while constantly stirring the mixture. After cooking for about 10-15 minutes, add the chopped tomatoes and salt. Leave the dish on low heat for about 30 minutes stirring occasionally. Take the pan off the heat and garnish with fresh coriander.
