  • 2 pkg. cornbread mix
  • 1 can cream style corn
  • 1 can whole kernel corn
  • 1 large onion, diced
  • 1/2 C. jalapeño peppers, diced
  • 2 lbs. Cheddar cheese, shredded
  • 2 eggs
  • Milk

Preheat oven to 400 degrees F. Prepare cornbread mix according to directions. Add all ingredients into a large mixing bowl and mix well. Use hands to get it all well mixed. Pour into greased muffin tin. Place in oven and reduce temperature to 350 degrees and bake for at least 50 minutes or until golden brown.
