  • 2 C. Arugula, chopped
  • 3-4 Jalapenos, stemmed, seeded, and sliced
  • 1 Medium Tomato, chopped
  • 1 Medium Cucumber, halved lengthwise and sliced
  • 1 C. Baby Bella Mushrooms, sliced
  • 1 C. Shredded Carrots
  • 1/4 C. Olive Oil
  • 2 Tbs. Balsamic Vinegar
  • 1/4 tsp. Fresh Oregano, chopped
  • 1/8 tsp. Sea Salt
  • 1/8 tsp. Ground Black Pepper
