  • 2 tsp. olive oil
  • 1 onion, chopped
  • 1 pound boneless, skinless chicken breast, cut bite-size pieces
  • 2 medium yellow-skin potatoes, halved
  • 1/4 C all-purpose flour
  • 1 1/2 C chicken broth
  • 3 chili peppers
  • Salt
  • Pepper

Heat oil in a large saucepan and cook onion until tender, about 1 minute. Add in chicken breast and potatoes, and cook until the chicken gains a little color, about 2 minutes.

Stir in flour until the chicken is coated. Pour in the broth and bring to a boil. Reduce heat to a simmer, cover and cook until potatoes are tender, about 12 minutes.

Add chili peppers into stew. If needed, season stew with salt and pepper. Serve warm in a bowl.
