  • 4 tomatoes
  • ¼ C. carrots, finely chopped
  • 2 cloves garlic, minced
  • 1 T. cilantro
  • ½ tsp. ground ginger
  • 1 ½ C. water
  • Salt and pepper to taste
  • ½ tsp. cumin
  • 3 T. ketchup
  • 2 tsp. hot sauce

In a pressure cooker, add tomatoes, carrots, garlic, cilantro, ginger, water, salt, pepper, and cumin. Cook on high until tomatoes are tender (about 10 to 15 minutes). Peel skins off of tomatoes and puree in a blender with the rest of the pressure cooker contents. Return puree to cooker and add ketchup and hot sauce. Mix and bring to a boil. Remove from heat and serve with Parmesan, green onions, and any other preferred garnishes.
