  • 1 whole chicken, rinsed and patted dry
  • 3/4 C. butter, softened
  • 3 whole lemons, cut in halves
  • 4 sprigs rosemary, chopped
  • 1/4 tsp. red pepper flakes
  • 2 cloves garlic, crushed
  • Salt and peppet to taste

Preheat oven to 400 degrees. Zest two lemons. In a bowl, combine all ingredients except for chicken. Line a baking sheet with foil and lay the chicken on the foil. Spread the butter mixture all over and inside the chicken. Place the lemon halves in chicken. Roast chicken in oven for 1 hour or until skin is a deep golden brown.
