  • 4 T. vegetable oil, divided
  • Juice from 1 lime
  • Juice from 1 lemon
  • 2 cloves garlic, minced
  • 2 tsp. cumin
  • 1 tsp. onion powder
  • 2 T. hot sauce
  • Salt and pepper to taste
  • 1 ½ lb. steak, cut into strips
  • 1 medium onion, sliced
  • 1 C. cherry tomatoes, halved
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 8-12 flour tortillas
  • Sour cream, for topping
  • Any other desired toppings

In a bowl, whisk together 2 tablespoons of oil, lime juice, lemon juice, minced garlic, cumin, onion powder, hot sauce, salt, and pepper. Place steak strips into a resealable plastic bag or container and pour the mixture over the steak. Marinate in the refrigerator for at least an hour, or even overnight for the best results. In a skillet, cook steak at a medium to high heat for about 5 minutes on each side, or longer according to your preference; set aside. With remaining oil, sauté onions, red and yellow bell peppers, cherry tomatoes, and more garlic if desired. Assemble fajitas and serve!
