  • 1 ½ C. diced tomatoes
  • 1 ½ C. corn
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • ½ onion, diced
  • 3 T. oil
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • Salt and pepper to taste
  • 1 (15 oz.) can black beans, drained and rinsed
  • Juice from 1 lime
  • Flour tortillas, warmed
  • Cheese for topping

Preheat oven to 400 degrees. In a small bowl, combine oil, cumin, chili powder, salt, and pepper. In a large bowl, combine tomatoes, corn, zucchini, squash, and onion. Drizzle seasoned oil over vegetables and toss to evenly coat. Pour into a baking dish and bake for 15 minutes, add black beans, toss with any extra seasoning you prefer, and bake for an additional 15 minutes. Remove from oven, drizzle lime juice over veggies, and assemble tacos.
