Spicy Mashed Potato Cakes
Serving Size / Yield
- 2-3 cups of mashed potatoes
- 1 C. of all-purpose flour
- 2 beaten medium eggs
- 2 Tbsp. of peanut oil
- 1/2 Tbs. paprika or cayenne pepper (depending on how spicy you want the cakes)
Mix the eggs with your mashed potatoes until well-blended. Add the flour and blend well. Add the desired amount of salt, pepper, and paprika or cayenne pepper. Form the mixture into small potato cakes, each about the size of a small teacup dish. Heat peanut oil in a skillet until glistening. Add the potato cakes.
Fry for approximately two minutes per side, or until golden brown on each side and warmed through.
