  • Meatball:
  • 1 onion, chopped
  • 1/2 Tbs. garlic powder
  • 1/3 C. chicken stock
  • 1/4 C. flat-leaf parsley, chopped
  • 1 lb. ground beef
  • 1/3 C. breadcrumbs
  • 2 eggs
  • 1/4 C. Parmesan cheese, grated
  • 1/2 tsp. Cayenne pepper
  • 1 tsp. salt
  • Other:
  • 1 jar of your favorite marinara sauce
  • 1 lb. pappardelle pasta

Combine all meatball ingredients until mixed well. Form into small-sized meatballs. Put 4 Tbs. olive oil in a large frying pan over medium heat. Slowly add meatballs and brown on all sides for about 10 to 15 minutes. Drain on paper towels. Cook pasta according to package directions. Drain pasta. Mix pasta with marinara sauce and meatballs.
