  • 1 egg, slightly beaten
  • 1/2 C. tomato sauce
  • one 4-oz. can whole green chilies, seeded, rinsed, and chopped
  • one 3-oz. can chopped mushrooms, drained
  • 1/3 C. fine dry bread crumbs
  • 1 tsp. salt
  • 1 tsp. chili powder
  • dash pepper
  • 1 1/2 lbs. lean ground beef
  • 3 slices Monterey Jack cheese, quartered diagonally

In a mixing bowl, combine egg, tomato sauce, chilies, mushrooms, crumbs, salt, chili powder, and pepper. Add meat and mix well.  Invert a 2-inch diameter juice glass in the center of an 8-inch round cake dish. Shape meat mixture in a ring around the glass.  Cover dish with waxed paper and microwave on high power for about 14 minutes, turning dish a quarter turn three times during coking.  Remove juice glass and drain of excess fat. Top meat with cheese and microwave, uncovered, for 45-60 seconds more.  Let stand 10 minutes before serving.
