  • 8 oz box of Fideo pasta
  • 1 lb ground beef
  • 2 tablespoons olive oil
  • ½ cup onion, chopped
  • 1 teaspoon garlic powder
  • 2 tablespoons flour
  • 1½ cups beef broth
  • 1 cup heavy cream
  • 8 oz mozzarella cheese, shredded
  • 1½ cup four cheese, shredded
  • 2 Roma tomatoes, diced
  • 2 Serrano peppers, diced

Preheat the oven to 350°F. Spray a baking pan with nonstick spray and set aside. Bring a large pot of salted water to a boil and add the spaghetti, cooking it until al dente. Drain and set aside. Brown the ground beef in a large skillet, breaking it up as you cook. Season to taste with salt and pepper and remove the beef once done and set to side. Heat the oil in the same skillet and add the onion, cooking for 5 minutes, or until it softens. Sprinkle the garlic powder and flour, cooking for another 2 minutes. Slowly pour in the broth and mix, bringing it to a boil. Add the cream and cheeses (except the 4 cheese), boiling and then bringing to a simmer for 2-3 minutes. Combine the cheese sauce, beef and noodles, pouring it into the baking pan. Layer it with the 1½ cups of four cheese evenly. Bake for 15-20 minutes, or until it starts to bubble.
