  • 2 T. canola oil
  • 2 tsp. garlic, minced
  • 1/4 C. red curry paste
  • 1 T. dark brown sugar
  • 2 13.5 oz. cans light coconut milk
  • 2 1/2 C. vegetable broth
  • 1/4 C. fresh lime juice
  • 1/4 C. fresh ginger, thinly sliced and peeled
  • 2 T. soy sauce
  • 1 1/2 C. red bell pepper and green bell pepper, chopped
  • 1 package water-packed soft tofu, drained and cut into cubes
  • 3/4 C. fresh cilantro leaves

Heat oil in a large saucepan over medium heat. Add garlic and saute 30 seconds or until lightly browned. Add curry paste and saute one minute, stirring constantly. Add brown sugar and cook one minute. Now stir in coconut milk, broth, juice, ginger, and soy sauce. Reduce the heat to low and cover so it can simmer for one hour. Add the bell peppers and cook for four minutes or until the vegetables are tender. Add the tofu to the pan and cook for two minutes. Garnish with cilantro leaves.
