This plum sauce is delicious when used over pork or poultry. It's sweet with a little kick that everyone is sure to love.

  • 4 lb. fresh plums, pitted and quartered
  • 1 small onion quartered
  • 1 clove garlic, peeled
  • 3 1/2 C. sugar
  • 2 C. cider vinegar
  • 1 Tbs. ground ginger
  • 1 Tbs. ground mustard
  • 1 tsp. ground cinnamon
  • 1 tsp. crushed red pepper flakes
  • 1/2 tsp. ground cloves

In a blender, combine the onions, plums, and garlic and blend in batches until smooth. Put the smooth plum mixtures into a Dutch oven and add in the remaining ingredients. Bring to a boil and reduce the heat. Simmer for 60 to 90 minutes, or until the mixture has reduced by a third.

Carefully ladle the hot mixture into hot half-pint jars, leaving 1/4-in. space at the top. Remove the air bubbles, wipe the rims, and adjust the rims. Process for 15 minutes in a boiling-water canner.
