  • 1 lb. pork tenderloin, chopped into bite-sized pieces
  • 2 T. soy sauce
  • 1 T. cornstarch
  • Salt and pepper to taste
  • ¼ tsp. sugar
  • ¼ tsp. ginger
  • 1 tsp. cayenne pepper
  • 1 onion, diced
  • 1 red bell pepper, chopped
  • 1 carrot, peeled and chopped
  • 2 cloves garlic, minced
  • 2 T. vegetable oil
  • 2 green onions, sliced

In a bowl, toss pork with soy sauce, cornstarch, salt, pepper, sugar, ginger, and cayenne pepper. In a large skillet, heat oil and cook pork until no longer pink. Add in onion, red bell pepper, carrot, and garlic. Sauté until vegetables are tender. Stir in green onions and serve.
