  • 1 Tbsp. olive oil
  • 6 red bell peppers, chopped
  • 2 yellow onions, chopped
  • 2 celery ribs, chopped
  • 3 cloves garlic, minced
  • 2 qt. chicken broth
  • 1/2 C. rice
  • 2 Tbsp. chopped thyme
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. crushed red pepper flakes
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Heat the olive oil in a large pot over medium high. Add the peppers, onions, celery, and garlic. Cook and stir about 10 minutes until tender. Pour in the broth, rice, thyme, cayenne, red pepper flakes, salt, and pepper. Bring the mixture to a boil, then reduce the heat. Cover and simmer 25 minutes until the rice is tender. Cool 30 minutes and blend until smooth. Serve with crusty bread.
