  • 2 tsp. coriander seeds, toasted and ground
  • 2 tsp. cumin seeds, toasted and ground
  • ¼ tsp. turmeric, ground
  • 2 stalks lemongrass, peeled and chopped
  • 1 shallot, finely diced
  • 1 T. garlic, grated
  • 1 T. ginger, grated
  • 1 chili, sliced
  • 1 lime (juice and zest)
  • 2 T. fish sauce
  • 2 T. brown sugar
  • 1 T. peanut oil
  • 1 head cauliflower, cut into florets
  • ¼ C. peanut sauce

Mix the coriander, cumin, turmeric, lemongrass, shallot, garlic, ginger, chili, lime, fish sauce, sugar, and oil. Marinate the cauliflower in the mixture in the fridge for 30 minutes or overnight. Arrange the cauliflower in a single layer on a baking sheet or in a cast-iron skillet. Roast in a preheat 400°F oven until lightly golden brown, about 20-30 minutes, flipping in the middle. Top with peanut sauce and serve warm.
