  • Tapenade:
  • 8 oz. black pitted olives, drained
  • 2 medium cloves garlic
  • 1/4 C. packed fresh parsley leaves
  • 1/4 tsp. dried red pepper flakes
  • 1 Tbs. capers, drained
  • 1 Tbs. red wine vinegar
  • 1 Tbs. fresh lemon juice
  • 2 Tbs. oil
  • Sea salt and pepper
  • Sandwich
  • 4 focaccia rolls
  • 4 oz. sliced Genoa salami
  • 2 C. packed arugula
  • 4 jarred roasted red bell peppers, drained
  • 1/4 C. crumbed goat cheese

To make the tapenade, combine the olives, garlic, parsley, pepper flakes, capers, vinegar, lemon juice, and oil in a blender or food processor and pulse until everything is combined and chopped fine. Season to taste with salt and pepper.

To make the sandwiches, split each focaccia roll in half and spread about 1 Tbs. tapenade on the top and bottom of the roll. Place a roasted pepper in the bottom half of each, followed by salami and arugula. Divide the goat cheese evenly on the sandwiches.
