  • 2 C. cooked ham, cubed
  • 1 C. salsa
  • 1 T. chili powder
  • 1 tsp. cumin
  • 2 C. Colby Jack cheese, shredded
  • 1 tomato, sliced

Preheat oven to 350 degrees. In a bowl, combine beans and salsa; spread along the bottom of a greased baking dish and top with ham. In a separate bowl, whisk together eggs, salt, pepper, chili powder, cumin, and 1 cup of cheese. Pour into baking dish, sprinkle with remaining cheese, and top with tomato slices. Bake for 30 to 40 minutes until eggs are firm.
