  • 1 lb shrimp, peeled and deveined
  • 2 C oysters
  • 1 C crab meat
  • 1 ½ c tomato sauce
  • 2 tsp hot sauce
  • 2 C celery
  • 2 C onion, chopped
  • ½ tsp cayenne pepper
  • 2 tsp paprika
  • ¾ C olive oil
  • 1 clove of garlic, minced
  • 7 C fish stock
  • 2 C chopped green bell pepper
  • ½ tsp white pepper
  • ½ tsp red pepper flakes
  • ½ tsp black pepper

Mix together paprika, red pepper flakes, white pepper, salt, and black pepper. Set mixture aside. In a large pot, heat olive oil over medium heat. Saute onions, celery, and green pepper. Next, mix in hot sauce, garlic, and the spice mixture you prepared earlier. Cook the mixture for about five minutes, stirring frequently.

Add in the tomato sauce and reduce over high heat. Next, add the fish stock and simmer for about an hour, stirring every so often. After sauce has finished cooking, add shrimp, oysters, and crab meat. Cook seafood in liquid for about five minutes. Let gumbo stand for about ten minutes before serving over rice.
