  • 8 Ounces of Andouille Sausage
  • 1 Pound of Peeled and Deveined Shrimp
  • 4 Cups of Chicken Broth
  • 1 Diced Onion
  • 1 Diced Red Pepper
  • 1 Diced Orange Pepper
  • 3 Stalks of Diced Celery
  • 5 Minced Cloves of Garlic
  • 3 Bayleaves
  • 1 Tablespoon of Cayenne Pepper
  • 1 Tablespoon of Paprika
  • 1 Tablespoon of Salt
  • 1 Tablespoon of Pepper
  • 2 Tablespoons of Tabasco Sauce
  • 1 Can of Diced Stewed Tomatoes
  • 6 Cups of White Rice
  • ¾ Cup of Sliced Green Onions
  • ½ Cup of Vegetable Oil
  • ½ Cup of Flour

In a heavy-bottom pot over medium-high heat, heat the vegetable oil and combine it with the flour until everything is smooth, continuously stirring this for around 15-20 minutes until it becomes a little darker than peanut butter. Then, stir in the onion, red pepper, orange pepper, and celery for around 10 minutes. Add in the sausage, garlic, and bayleaves and stir for another 2 minutes or so.

Next, add in the tomatoes, tabasco sauce, cayenne pepper, paprika, salt, and pepper and bring everything to a simmer. Then, lower the heat to medium-low and cover the pot, allowing it to cook for 17-20 minutes. This might be a good time to begin cooking your rice so that it’s ready by the time the gumbo is.

After it has simmered, add in the shrimp and recover it for another 15 minutes or so. Then, fill half a bowl with rice and half a bowl with this gumbo and sprinkle green onions on top to serve.
