  • 1 pound large shrimp, peeled and deveined, tails removed
  • 1 teaspoon chili powder
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon onion powder
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons olive oil, divided
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper sliced
  • 1 medium sized onion, sliced
  • ¼ cup chopped cilantro
  • 2 avocados, sliced
  • 6 tortillas
  • ¼ cup sour cream

In a large bowl, add the shrimp, chili powder, cumin, garlic powder, paprika, onion powder, salt and pepper. Toss together and set aside.
In a medium sized skillet over medium high heat, add 1 tablespoon olive oil, bell pepper and onion. Sautee until tender, about 5-7 minutes then slide to the side of the skillet.
Add a tablespoon of olive oil and shrimp and cook until no longer pink.
To serve, spoon into tortillas and top with sliced avocado and a dollop of sour cream each.
