  • ¼ C olive oil
  • 1 lb shrimp, peeled, deveined, with shells removed
  • 1 C rice
  • 1 T tomato paste
  • 1 tsp paprika
  • 1 clove of minced garlic
  • 2 C clam broth
  • 2 C water
  • Salt and pepper to taste
  • 1 tsp turmeric

First, season shrimp with salt and pepper. Heat olive oil in a skillet and add the shrimp. Cook shrimp for about two minutes on each side, or until they’re lightly browned. After shrimp are done cooking, remove from skillet and set them aside.

Next, add the rice to the skillet and cook it for about two minutes until it’s opaque. Mix in the tomato paste, garlic, paprika, and turmeric and cook for about five minutes. Add the clam broth and water and simmer for about 10 minutes until rice has absorbed about half of the liquid. Add shrimp back into the skillet and cook for about two minutes longer.

After shrimp and rice are cooked through, serve paella hot.
