This jambalaya is another great dish from New Orleans. The simplicity of just tossing all the ingredients into a crockpot and leaving it makes this recipe perfect for a busy day dinner. Enjoy the spice of this jambalaya with some rolls on the side.

Ingredients

  • 5 chicken breasts, cubed
  • 1 lb. kielbasa, sliced
  • 1 (28 oz) can diced tomatoes, undrained
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 2 tsp. garlic, minced
  • 2 tsp. Cajun seasoning
  • 1 tsp. cayenne pepper
  • 1 C. broth
  • 2 tsp. dried oregano
  • 2 tsp. dried parsley
  • 1/2 tsp. dried thyme
  • 4 C. cooked rice

In a crockpot mix all the ingredients except the rice, cover and cook on low for 6 to 8 hours. In the last 20 to 25 minutes, add the cooked rice.
