Spicy Spanish Rice

Ingredients
- 1 C. cooked white or brown rice
- 1/3 C. canned black beans, rinsed and drained
- 1 sm. red bell pepper, minced
- tomato salsa
- 1/4 tsp. ground cumin
- 1/8 tsp. garlic powder
- 1/3 C. shredded reduced-fat cheddar cheese
- 1 Tbs. minced fresh cilantro
- 2 C. shredded lettuce
Directions
In a medium bowl, combine all ingredients except lettuce. Toss lightly to mix well. Chill until ready to serve. To serve, divide lettuce between 2 plates. Top with rice salad.
