  • 12 cups chicken broth
  • 1 cup heavy cream
  • 10 ounces chopped spinach
  • 8 ounces crumbled blue cheese
  • 2 cups chopped onion
  • 1 cup flour
  • 4 cups milk
  • 6 tablespoons butter
  • Cayenne pepper

Heat the butter and onions in a large pot over medium heat. Cook for 3 minutes then add the flour and stir. When well mixed, add the broth and increase the heat to bring the pot to a boil. Continue to whisk the soup and add the milk. Lower the heat back to medium and simmer for 5 minutes before adding the blue cheese. Stir and add the spinach. Cook for 3 minutes. Add the cream and boil the pot again. Turn off the heat, stir and allow the soup to cool. Season with cayenne pepper, blend in a food processor and serve.
