  • 1 Tbs. Olive Oil
  • 1 C. Yellow Bell Peppers, stemmed, seeded, and chopped
  • 6 C. Baby Spinach Leaves
  • 1 C. Tomatoes, chopped
  • 1 C. Kalamata Olives
  • 1/2 Small Red Onion, sliced
  • 1/2 Thai Chili Pepper, sliced
  • 5 Tbs. Olive Oil
  • 1/8 C. Lemon Juice
  • 1/4 C. Sesame Seeds

Warm up the olive oil in a medium skillet over high heat. Add the chopped bell peppers and sauté until tender. Remove from heat and let cool. Meanwhile, combine the spinach, tomatoes, olives, red onion, and chili pepper in a large serving bowl. Add the sautéed peppers. Drizzle the salad with olive oil and lemon juice, and toss to coat. Sprinkle with sesame seeds before serving.
