Spicy Spinach Salad with Goat Cheese and Pumpkin Seeds

Ingredients
- 1 lg. bunch spinach
- 1 lg. red onion
- 4 med. red radishes
- 2 serrano chilies
- 1/2 C. goat cheese
- 1/2 C. hulled pepitas (pumpkin seeds)
- 1/2 C. olive oil
- 1/4 C. dry white wine
- 3 Tbs. lime juice
- 1 Tbs. Tabasco sauce
Directions
Remove stems from spinach, wash leaves, and dry. Remove skin from onion and cut into 1/4-inch rounds. Remove stem and roots from radishes and cut into 1/4-inch rounds. Remove stems and seeds from the chilies and cut into 1/2-inch pieces. Crumble goat cheese. Combine spinach, onion, radishes, chilies, and pepitas in a large mixing bowl. In a small bowl with a cover, combine olive oil, wine, lime juice, and Tabasco sauce. Cover and shake until well blended. Pour dressing over salad and toss until well coated. Top with crumbled goat cheese.
