  • 2 lb. Stew Beef, cubed
  • 2 tsp. Smoked Paprika
  • 1 tsp. Sea Salt
  • 1 tsp. Ground Cinnamon
  • 1 tsp. Ground Ginger
  • 1/2 tsp. Red Pepper Flakes
  • 1/2 tsp. Red Peppercorns
  • 2 Tbs. Olive Oil
  • 5 Garlic Cloves, minced
  • 2 lb. Butternut Squash, wedged
  • Green Onion, green parts only, chopped, for garnish

Preheat oven to 375 degrees. Lightly grease a 9x13" baking dish with nonstick cooking spray. In a large bowl, combine the stew beef, paprika, salt, cinnamon, ginger, red pepper flakes, and red peppercorns, and toss to coat. Warm the olive oil in a large skillet over medium-high heat. Add the beef and brown until tender. Add the garlic cloves and continue cooking until fragrant. Remove meat from heat and stir in the squash wedges. Pour beef and squash mixture into the prepared baking dish. Bake for 30 minutes or until dish is warmed through. Garnish with chopped green onion before serving.
