Ingredients

  • 1/4 C. Olive Oil
  • 1/4 C. Sun-Dried Tomatoes
  • 1/2 Red Chili Pepper, chopped (optional)
  • 2 Tbs. Red Wine Vinegar
  • 1 tsp. Granulated Sugar
  • 1 tsp. Dried Oregano
  • 1 Garlic Clove, minced
  • Sea salt, to taste
  • Ground Black Pepper, to taste
  • 6-8 C. Pre-Cooked Rotisserie Chicken, shredded
  • 2 Green Onions, white and green parts only, thinly sliced

Preheat oven to 350 degrees. In a medium bowl, combine the olive oil, sun-dried tomatoes, red chili pepper (if desired), red wine vinegar, sugar, oregano, and garlic. Season with salt and pepper as needed. Spread the shredded rotisserie chicken out in a single layer on the bottom of a 9x13" baking dish. Pour the sun-dried tomato mixture on top. Sprinkle with green onions. Bake for 20-30 minutes, or until warmed through.
