  • 1 lb. leftover rotini marinara
  • 1 1/2 C. vegetable stock
  • 1 T. dried basil
  • 2 T. garlic powder
  • 2 paprika peppers, quartered and roasted
  • 4 Roma tomatoes quartered and roasted
  • 1/2 red onion, diced
  • salt and pepper

In a large pot, combine leftover pasta with vegetable stock and spices. Over a medium low heat, stir occasionally, seasoning with salt and pepper to taste. Add in tomatoes and peppers, stir well to combine. Let soup simmer until broth starts to thicken, for about 20-25 minutes.
