  • pastry for 9-in. pie crust
  • dried beans, to be removed
  • 3 eggs
  • 1 1/3 C. milk
  • 1/2 tsp. salt
  • 3/4 C. shredded cheddar cheese
  • one 4-oz. can whole green chilies, seeded, rinsed, and chopped

Line 9-inch pie plate with pastry, fluting edges high.  Carefully line pastry with foil; cover bottom with dried beans.  Bake in 400 degree oven for 10 minutes, then remove foil and beans.  Bake 3-4 more minutes or until lightly browned.  Reduce oven temperature to 375 degrees.  In a bowl, beat together eggs, milk, salt, and pepper.  Stir in cheese and green chilies.  Pour into cooled pastry shell.  Bake in 375 degree oven for 35 to 40 minutes or until knife inserted just off center comes out clean.  Let stand 10 minutes before serving.
