  • 2 eggs, large
  • ½ C. broccoli, chopped
  • ¼ C. tomato, chopped
  • ¼ C. red onion, chopped
  • ¼ C. cheddar cheese (+ more for taste)
  • 1 tsp. Jalapeno, finely chopped
  • 1 Tbs. olive oil
  • Salt and pepper to taste

Heat the olive oil in a small skillet. Saute the garlic and onion, stirring frequently, until tender (about 3 minutes). Add in the pepper and broccoli and cook for 3 minutes. Whisk the eggs and season them with salt and pepper. Stir in the cheese and tomatoes. Pour this evenly over the cooking veggies. Let the eggs cook for a second (add extra cheese now if you want). After a few minutes, fold the omelette in half. Once it sets a bit, flip the omelette and cook it for another couple of minutes.
