  • 1 can chicken broth, divided
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1 can navy beans, drained
  • 1 medium poblano chile, halved and seeded
  • 1/2 onion, cut into wedges
  • 1 pt. grape tomatoes
  • 1/4 C. chopped cilantro
  • 2 Tbsp. lime juice
  • 1 Tbsp. olive oil
  • 1/4 tsp. salt

Combine 1 cup broth, chili powder, cumin, and beans in a Dutch oven. Mix the rest of the broth, poblano, and onion in food processor until the vegetables are chopped. Add both mixtures to the crockpot. Put the tomatoes and cilantro in the crockpot and cover. Cook on low for 4 hours until the vegetables are tender. Stir in the lime juice, oil, and salt before serving.
