Spicy Zucchini Rice Bake

A good way to spice up your zucchini with an awesome taco taste without the meat!

Ingredients

  • 1 1/2 lb. zucchini chunks
  • 1 sm. onion chopped
  • 1 C. uncooked long grain rice
  • 1 pkg. taco seasoning
  • 1 can cheddar cheese soup
  • 1 can water
  • 8 oz. shredded cheddar divided
  • 8 oz. chunky salsa mild med. or hot
  • 2 Tbs. olive oil

Directions

Prepare uncooked rice according to directions on package. Set aside. Saute zucchini, onions and taco seasoning in a pan until partially cooked. Add 1 can cheddar cheese soup to 1 can of water and blend. Add rice, soup, and 1/2 the salsa to the zucchini and onion mixture. Pour mixture into a greased 9x13-inch baking dish. Sprinkle with half of the cheddar cheese. Spread remaining salsa and sprinkle with remaining cheddar cheese. Bake in preheated oven at 350 degrees for 20-25 minutes.
