Spicy Zucchini Rice Bake

Ingredients
- 1 1/2 lb. zucchini chunks
- 1 sm. onion chopped
- 1 C. uncooked long grain rice
- 1 pkg. taco seasoning
- 1 can cheddar cheese soup
- 1 can water
- 8 oz. shredded cheddar divided
- 8 oz. chunky salsa mild med. or hot
- 2 Tbs. olive oil
Directions
Prepare uncooked rice according to directions on package. Set aside. Saute zucchini, onions and taco seasoning in a pan until partially cooked. Add 1 can cheddar cheese soup to 1 can of water and blend. Add rice, soup, and 1/2 the salsa to the zucchini and onion mixture. Pour mixture into a greased 9x13-inch baking dish. Sprinkle with half of the cheddar cheese. Spread remaining salsa and sprinkle with remaining cheddar cheese. Bake in preheated oven at 350 degrees for 20-25 minutes.
