Spinach and Baby Lima Beans

30 min preparation + 2 hour cooking

Ingredients

  • 2 pkgs. frozen spinach or fresh spinach
  • 1 pkg. frozen baby lima beans
  • 1 Tbs. parsley
  • 1 C. fresh dill
  • 1 C. tomato sauce
  • 1/2 C. vegetable oil
  • salt
  • pepper
  • 1 dry onion
  • 1 C. water

Directions

If frozen spinach is used, defrost the night before. Drain and squeeze out excess water. Saute finely chopped onions. Cut spinach into 2-inch pieces and place all other ingredients in oil. Add tomato sauce and water. Place in pan and cover with aluminum. Bake for 2 hours. Remove aluminum and allow to cook, uncovered, until done.


Serve with: Pork Chops in Wine
