Spinach And Beet Salad
Ingredients
- 1 C. baby spinach
- 1 C. romaine lettuce or salad greens of your choice
- 4 hard boiled eggs, chopped
- 1 Tbs. reduced fat mayonnaise
- 2 slices red onion, diced
- 1/2 piece celery, diced
- 1/4 tsp. dill
- black pepper to taste
- 1/2 avocado, cubed
- 8 pickled beets, sliced and halved
- 1/4 C. white northern beans or black beans (optional)
- red wine or balsamic vinegar (optional)
Directions
1. Toss spinach and lettuce in bowl, then place on large plate.
2. Mix mayonnaise, onion, celery, pepper, eggs, benas if using, and dill. Place mixture on the bed of greens.
3. Distribute beets around the edge of greens and beans.
4. Add the avocado.
5. If you like, you can add some balsamic or red wine vinegar (But it taste great with or without the vinegar).
