Spinach and Broccoli Pasta

Inexpensive and uncomplicated for those nights when planning dinner is the last thing on your mind.

Ingredients

  • 1 8 oz. bag of egg noodles
  • 1 C. of frozen chopped spinach
  • 1 C. of frozen chopped broccoli
  • Grated cheese

Directions

Cook pasta according to package directions. When it is half cooked add the spinach and broccoli to the pot. When pasta has reached the desired softness, drain into a colander. Place pasta vegetable mixture in a bowl and toss with the grated cheese of your choice. You could also add: pieces of leftover chicken, pre-cooked shrimp or additional vegetables.

Yield: 2-3 servings

  • doesn't seem like there would be any flavor and i don't really care for spinach with broccoli. how about some garlic or ricotta cheese?
