  • 5 cups cauliflower florets, chopped into large pieces
  • 3 cups spinach, washed
  • ¼ cup olive oil
  • 2 cloves garlic, sliced
  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon parmesan cheese, grated

Preheat the oven to 475F. Add the spinach and then cauliflower into a baking dish. Drizzle with olive oil, lemon juice and add garlic. Season with salt and pepper. Bake for 15-17 minutes, stirring occasionally. Once removed from the oven, sprinkle with parmesan cheese and serve.
