  • 8 C. spinach leaves
  • 1 ½ tsp. extra virgin olive oil
  • 1 onion, chopped
  • ¼ C. provolone cheese
  • ⅓ C. feta cheese
  • 1 egg, beaten
  • 12 sheets phyllo dough

Heat an oiled skillet over medium-low heat, add spinach, cheeses and onions to it. Cook for about 2 minutes and then transfer them to a bowl to cool. Stir in an egg in the bowl and lightly season it with salt and pepper. Preheat oven to 350˚ degrees F and then, lay one phyllo sheet on a flat surface. Top with a second phyllo sheet. Cut the phyllo sheets lengthwise into 4 long strips and place bowl mixture on the bottom of the first phyllo strip. Fold the strips to make it look like a triangle. Brush the folded strip in oil and transfer to baking sheet. Repeat with the same steps with the remaining phyllo strips. Bake them for about 15 minutes.
