Even if picky little eaters might think this casserole looks displeasing, it tastes absolutely delicious. Add even more cheese to make it extra tasty!

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 8 tablespoons butter, melted
  • 2 packages frozen spinach, thawed
  • 6 eggs, beaten
  • 2 tablespoons all-purpose flour
  • 2 cups cottage cheese
  • 4 cups cheddar cheese, shredded

Preheat oven to 350 degrees. Saute onion, garlic and 2 tablespoons butter in pan, over medium heat. In a large bowl, mix spinach, eggs, cottage cheese, flour, 3 cups cheddar and remaining butter. Add onions and garlic. Mix well. Pour on 13-by-9-inch baking dish. Garnish with remaining shredded cheese. Bake for 1 hour or until cheese is golden brown.
