Try a different dish by taking portobello mushrooms and stuffing them with delicious cheese and spinach. Stuffed mushrooms aren't a common idea for main courses, but are extremely delicious when put together well. Your guests and family will love these!

  • 2 large portobello mushroom caps
  • 1 onion, chopped
  • 1 Tbs. oil
  • 1 bag frozen spinach, thawed
  • 4 cloves garlic, minced
  • 1 Tbs. red pepper flakes
  • 1 C. mozzarella cheese

Preheat oven to 350 degrees F. Rinse mushroom caps to clean and pat dry. In a saucepan, heat oil and cook onions until they become translucent. Mix in spinach, garlic, red pepper flakes, and continue cooking for 3 additional minutes. Spoon half the mixture into each mushroom cap and pat down. Top caps with mozzarella cheese and bake for 15 minutes or until mushroom is cooked through and cheese has melted over mixture.
