Spinach and Chicken Delight
Ingredients
- 2 pkg. baby spinach
- 3 Tbs. olive oil
- 2 cloves garlic, cut up in slivers
- 1 box fresh mushrooms, halved
- 2 pkg. chicken, cut very thin
- 1 C. flour
- 1/4 C. breadcrumbs
- 2 eggs, scrambled
- 1/2 C. vegetable oil
- white rice
Directions
Place 1 Tbs. olive oil in pot big enough to hold 2 bags of baby spinach. Heat and then put in garlic and cook until lightly brown. Throw in spinach and put in another Tbs. of olive oil, cover.
In another pan, fry mushroom in olive oil. Drain and throw in spinach. Stir and cover for 3 minutes and let stand. Take flour and breadcrumbs and season to taste. Put in a plastic bag and mix up until blended. Wash chicken pieces and dredge into plastic bag with flour mixture. Fry in a frying pan with vegetable oil until golden brown. Drain on paper towel.
Put together: first layer should be white rice, then spinach & mushroom combination, and then top with chicken.
